Ingredients

  • 8 oz semi-sweet chocolate chips

Instructions

  1. Prepare the Crust: Preheat the oven to 325°F (165°C). In a mixing bowl, combine the chocolate cookie crumbs with melted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake the crust for about 10 minutes, then remove from the oven and set aside to cool.
  2. Make the Cheesecake Filling: In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy. Add the melted chocolate and cocoa powder to the cream cheese mixture and blend well. Incorporate the eggs one at a time, mixing just until combined. Stir in the peppermint extract until the mixture is smooth.
  3. Bake the Cheesecake: Pour the cheesecake filling over the cooled crust. Bake in the preheated oven for 50-60 minutes, or until the center is set and the edges are slightly puffed. Turn off the oven and let the cheesecake sit in the oven for an additional hour to cool gradually.
  4. Prepare the Topping: In a saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat and add the chocolate chips, stirring until the mixture is smooth and glossy. Let the chocolate mixture cool slightly before pouring over the cooled cheesecake.
  5. Assemble and Chill: Pour the ganache over the cheesecake and spread evenly. Sprinkle crushed peppermint candies over the top. Refrigerate the cheesecake for at least 4 hours, or overnight, to set.
  6. Serve: Before serving, garnish with whipped cream and additional crushed peppermint candies if desired.
