Description

Delicious puff pastry pockets filled with eggs, ham, and fresh herbs.


Ingredients

  • 1 sheet puff pastry, thawed
  • 4 large eggs
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter
  • 1/2 cup diced ham
  • 2 tablespoons fresh herbs, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup all purpose flour for dusting

Instructions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.
  2. In a skillet, melt butter over medium heat.
  3. Whisk eggs with milk, salt, and pepper, then gently cook until slightly underdone.
  4. Remove eggs from heat and stir in diced ham and chopped herbs.
  5. Roll out puff pastry and cut into rectangles.
  6. Spoon egg mixture down the center and fold pastry over, sealing edges.
  7. Place pastries on the prepared baking sheet and brush lightly with milk or egg wash if desired.
  8. Bake for 20–25 minutes until pastry is golden and puffed.
  9. Let cool slightly before slicing and serving warm.

Notes

  • For a vegetarian option, omit the ham and add more herbs or vegetables.
  • These can be made ahead and frozen, then baked directly from the freezer.
