- 1 pound ground beef (80/20 blend recommended)

- 1 tablespoon olive oil
- 1 tablespoon butter
- 8 ounces cremini or button mushrooms, sliced
- 4 slices Swiss cheese
- 4 hamburger buns
- 2 tablespoons mayonnaise (optional)
- to taste Lettuce or tomato slices for serving (optional)
Instructions
- Start by heating the olive oil and butter in a skillet over medium heat. Once the butter is melted, add the sliced mushrooms. Sauté them for 8–10 minutes, stirring occasionally, until they’re deeply browned and any moisture has evaporated. Season with a pinch of salt and black pepper.
- While the mushrooms cook, divide the ground beef into four equal portions and gently form into patties. Try not to overwork the meat—you want them tender. Season each side with salt and pepper.
- In another skillet or on a griddle, cook the patties over medium-high heat for 3–4 minutes per side for medium doneness. In the last minute of cooking, place a slice of Swiss cheese on each patty and cover the pan briefly to melt the cheese.
- Lightly toast your hamburger buns in a skillet or under a broiler for a minute or two until golden. This step adds a little crunch and helps hold up all the savory fillings.
- Spread a little mayo on the bottom bun (if using), then place the cheesy patty on top. Spoon over a generous heap of the sautéed mushrooms. Add lettuce or tomato slices if desired, then top with the bun lid.
