- 1 pound baby potatoes, halved
- 3 tablespoons olive oil
- 3 tablespoons fresh lemon juice
- 4 garlic cloves, minced
- 2 tablespoons fresh rosemary, chopped

Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Wash and dry the baby potatoes thoroughly, then slice them in half.
- In a mixing bowl, combine the halved potatoes, olive oil, lemon juice, minced garlic, chopped rosemary, salt, and pepper. Toss until evenly coated.
- Spread the potatoes in a single layer on the prepared baking sheet.
- Bake for 25-30 minutes or until golden brown and crispy, flipping halfway through.
- Remove from the oven and drizzle with additional lemon juice if desired. Allow to cool slightly before serving.
Notes
- For extra flavor, consider adding other herbs like thyme or dill.
- Serve with a squeeze of fresh lemon juice on top.
